5. Chef sauce (or malt vinegar when that isn't available which is like 99.9% of the time -- goes on fish and chips)
4. Woeber's Sandwich Pal spicy mustard (bratwursts)
3. Tapitio hot sauce (tacos)
2. Cholula hot sauce (any other Mexican food)
1. Sriacha (pizza and everything)
Soy Sauce (on almost anything, Kikomann is my favorite brand)
Mayonnaise (not Salad Dressing) good base condiment to compliment others (home made is best).
BBQ sauce, lots of good brands but I prefer Memphis style or my own recipe.
Catchup, good classic condiment for burgers
Mustard, all kinds. I love mustard from classic plain yellow to the darkest brown. Each one has it's place.
Hot Sauce, again there are so many good ones. But a couple of common ones I like are Chalula (mexican) and Louisiana (Louisiana style duh.) But those are just a couple of good ones. There are many great hot sauces, which is one thing I love about them. Ever had Pickapeppa? Oh my god. Such good stuff and such variety!
Oh and Extra Virgin Olive Oil, most people over look this as a condiment. But thats the way it's often used. Excellent if you get a good one.

OMG...you hot sauce lovers should try the green tobasco. It isn't as hot as red, but provides this wonderful belly, palate tickling sensation that makes me wild. Use it on bean nachos or anything Mexican. Surely it excites the part of the brain (hippocampus?) responsible for sex and love...it's that good.
Second fave is balsalmic vinegar, though I can rarely afford the really good stuff at $40 for 4 oz. but even the cheap stuff makes tomatoes more tomatoey, and salads richer and deeper in flavor. http://lofistl.ning.com/video/video/show?id=814862%3AVideo%3A45248
Instead of soy sauce, I like tamari. I can get a really good gluten-free version. It's less salty than soy and has a more complex flavor.
Last two would have to be salsa and all kinds of mustard. I agree, Bill, plain yellow has it's place.
